Air Fryers Explained: Size, Features and Everyday Use

An air fryer is a small, fast fan oven with a basket. Here is what that means for capacity, controls, cleaning, safety and the claims that tend to follow the appliance around.

At a glance

  • An air fryer circulates hot air in a compact chamber; it behaves like a small fan oven rather than a deep fryer.
  • Capacity in litres matters less than how much food fits in a single layer without crowding.
  • Browning chemistry applies to any hot, dry cooking: aim for light golden and follow pack instructions.
  • Let it cool, unplug it, and wash only the parts the manufacturer says can be washed.

Take away the name and an air fryer is a compact chamber with a heating element at the top, a fan beside it, and a perforated basket or tray below. Hot air moves fast around a small volume of food, which dries and browns the surface quickly.

That description explains most of what follows. Because the chamber is small, preheating is short and crowded food steams instead of crisping. Because the air is dry, foods with a little surface fat do best. And because it is an electric heater in a plastic-and-metal housing, the manual matters more than it would for a saucepan.

Choosing a size

Capacity is quoted in litres, but two baskets with the same figure can hold quite different amounts of food depending on their shape. A tall, narrow basket suits chips poured in a heap; a wide, shallow one suits a single layer of wings, fish or sausages, which is how most foods crisp best. When you compare models, ask how much food fits in one layer, not only how many litres are on the box.

A rough planning guide to basket size (approximate, not a standard)
Basket capacitySensible forTypical limitation
Around 2 to 3 LOne person, snacks, reheatingA second batch is often needed for two people
Around 4 to 5 LTwo people, or a small family of snack-style mealsWhole-meal portions for four usually mean cooking in batches
Around 6 to 8 LFamilies, larger cuts, shared sidesTakes more worktop and cupboard space; heats more air
Dual or multi-drawerCooking two items at once at different settingsEach drawer is smaller than the total litres suggest
Oven-style with shelvesMultiple trays, toast, bakingCloser to a mini oven; wider footprint, more cleaning

Features that earn their keep

  • A readable, adjustable temperature dial or display. Fixed presets are convenient but vary by model, so a temperature you can set yourself is more useful than a symbol for “fish”.
  • A timer with automatic shut-off. Electrical Safety First recommends never leaving an air fryer running unattended.
  • A basket you can pull out cleanly. A good handle, a release that does not slip, and a surface that lets food shake loose make daily use easier.
  • A window or light. Useful for checking colour without opening and losing heat, though not essential.
  • Removable parts that suit how you wash up. Check whether the basket, tray or divider can go in a dishwasher or must be hand-washed.

Presets, app control and recipe screens are the least reliable features to pay extra for. They save little time compared with learning two or three settings that work for your usual meals.

Myths worth setting aside

“It fries without oil, so it is the healthy option”

This article does not make a health claim for air fryers, and neither should a product page without a source. What can be said is narrower: it cooks with hot air, so foods that already contain fat need little or none added, while raw potato and similar foods usually need a light coating to brown. Whether that suits your diet is a separate matter for your own health professional or national dietary guidance.

“Dark and crispy means done properly”

Browning in starchy foods creates acrylamide, a compound that national food agencies want people to keep low. Health Canada advises frying only until light golden, at no more than 175°C, and toasting to the lightest colour you find acceptable. Food Standards Australia New Zealand gives similar advice, including a moderate oven setting of 180 to 190°C for oven-cooked potato products cooked to a light golden colour. None of those pages is specific to air fryers, so the principle carries over, but it does not hand you an air-fryer temperature. Follow the pack instructions, shake or turn food, and treat deep brown as a prompt to stop.

“You never need to preheat, and you can use any liner”

Preheating needs depend on the model and manual, so read yours. Liners are a safety issue rather than a convenience: Electrical Safety First advises against paper because, if it is not weighted down by food, it can touch the heating element and catch fire, and recommends checking the manufacturer’s guidance before using any.

Setting it up safely

Place the appliance on a stable, heat-resistant surface with space around the vents; manufacturers specify how much, and the number differs between models, so check the manual rather than relying on a general figure. Keep the cable away from hot surfaces and the edge of the worktop. Do not overfill, since Electrical Safety First warns that overfilling can cause a fire.

Air fryers draw a lot of current. The same charity’s guide to appliance ratings notes that extension leads can cause overloads when chained together, and many manuals ask you to plug a high-wattage appliance directly into a wall socket. Wattage differs by model, so read the rating plate. In Canada, look for a recognised certification mark on the product; Ontario’s Electrical Safety Authority, for instance, states that electrical products should carry the mark of an accredited agency such as CSA, UL or Intertek. In the UK, the charity says an air fryer should have a 3-pin plug with a fuse. Rules differ, so check yours.

If you are thinking about a smart plug for scheduling, confirm the plug’s own rating first; Smart Plugs Explained: Useful Ways to Upgrade Your Home explains what to check.

Cleaning without damaging it

  1. Switch off and unplug

Unplug at the socket once cooking has finished. Never leave the appliance unattended while it is running.

  2. Wait for it to cool

Electrical Safety First advises at least 30 minutes so the unit has cooled fully before you start cleaning.

  3. Remove only the parts that are meant to come out

Basket, tray and dividers usually lift out. Only immerse parts the manufacturer says can be immersed, and never the main body.

  4. Wash and dry the removable parts

Use warm soapy water and a non-abrasive cloth or sponge unless the manual says the parts are dishwasher-safe. Abrasive pads can damage a non-stick coating.

  5. Wipe the inside and the element area

A damp cloth removes fat splashes. Let everything dry before reassembling.

  6. Check the plug and cable

Look for burn marks, buzzing or crackling sounds, a hot plug, or a blown fuse. If you see any, stop using it and contact the retailer or manufacturer.

Does an air fryer replace the oven?

For small portions it can do many of the same jobs, but capacity is the limit. Large roasts, trays of baking and family-size batches still suit an oven.

Can I cook frozen food straight from the freezer?

Many packs say yes, and some manufacturers publish times. Follow the pack instructions, which also reflect acrylamide guidance from the agencies mentioned above.

Why does mine smoke?

Usually it is accumulated fat or crumbs on the element or the base of the drawer. Switch off, let it cool, clean it, and consult the manual if it persists.
